Chef's 10 min air fryer Chicken pesto pinwheels are 'ultimate' lunchtime snack

When it comes to lunchtime 'picky' bits, nothing quite compares to a chicken pinwheel, accompanied by tomato and pesto - with the perfect cheese pull.

While Brits often search supermarket shelves for the scrumptious snack, one chef has revealed his low carbohydrate recipe, which is so simple to make. Cooking expert iRick Wiggins, under the username @iricksnacks, took to TikTok to share his six ingredient dish.

The expert rose to fame after sharing the recipes online that helped him lose 80lbs by following a low carbohydrate diet. According to Healthline, these diets limit foods that are high in carbs or added sugar, including sweets, starches, and refined grains. You can find iRick’s pinwheel recipe below.

Ingredients

  • 1.5oz cream cheese
  • One low-carb tortilla
  • 1.5tbsp pesto
  • ¼ cup shredded chicken (cooked)
  • Three tbsp tomatoes (halved)
  • ⅓ cup mozzarella (shredded)
  • Butter

Method

  • To start making this tasty treat, simply spread the cream cheese and pesto on a tortilla. Then, add the chicken, tomatoes, and mozzarella.
  • Next, tightly roll up the tortilla and brush the outside with butter. Cut the rolled tortilla into thick slices - you should get around six pinwheels from this.
  • Place the pinwheels into a lined airfryer, and cook at 200°C for around six to eight-minutes. Cool before serving and enjoy!

iRick concluded: "This protein packed keto recipe is quick, easy and so delicious." The viral video has amassed an impressive 217K likes, and followers flocked to the comments to share their reaction.

What foods can you eat on a low carb diet?

An average low carb diet typically contains less than 26 percent of total daily calories from carbs, explains Healthline. It can be difficult to know what to eat on a low carb diet, but the health site has detailed the foods that are allowed. These include:

  • Meat: beef, lamb, pork, chicken

  • Fish: salmon, trout, haddock, tuna

  • Eggs: whole eggs, egg whites, egg yolks

  • Non-starchy vegetables: spinach, broccoli, cauliflower, carrots, asparagus, tomatoes

  • Lower carb fruits: oranges, blueberries, strawberries, raspberries, blackberries

  • Nuts and seeds: almonds, walnuts, sunflower seeds, chia seeds, pistachios

  • High-fat dairy: cheese, butter, heavy cream, Greek yogurt

  • Fats and oils: lard, avocados, avocado oil, olive oil, coconut oil
