Jamie Oliver's trick for 'outrageous' pork crackling is leaving people drooling
We all have our favourite parts of a roast dinner, whether that's the roast potatoes or the stuffing. But one thing that will unite all pork lovers is crackling.
Fighting over that last piece of crispy skin where the fat has rendered to perfection making your mouth water is par for the course when it comes to Sunday lunch.
Now, you can learn to do amazing pork crackling as Jamie Oliver has revealed his "outrageous" tips to perfecting it. "Follow me and I promise this pork recipe will change your cooking, it's unbelievable," he exclaimed while revealing his pork loin secrets.
Showing off a large piece of pork loin, Jamie skimmed the crackling skin off the top, explaining "your butcher will do this for you." He then scored the crackling using his own "cooking Stanley knife", as "you want it to be shareable." The whole piece of skin is still in tact, yet the score lines created a number of different strips, ready to be teared at when fully cooked.
Jamie then put the skin fat side down into a frying pan to sear and render briefly. After it was done browning, he took it out and placed the seasoned loin in the same pan to sear all over and develop "that beautiful caramelised flavour."
'I don't want children staying up late at weekends - I really need adult time'When the pork loin was ready to go in the oven, he made sure to put the pork skin "straight onto the [oven] bars" above the roasting loin. While this tip might require you to clean your oven before and after cooking, Jamie explained that the flavourful results of this trick would be worth it. "Remember the heat's coming from the bottom and the top", he said. "And then it's dripping on our pork down below which is creating the most amazing simple gravy. That's going to really look after your pork, guaranteeing juiciness."
The chef showed the pork skin crackling up into the beloved roast dinner side dish we love, with fat dripping between the bars into the pork loin dish below. As he took the dish out, he cut up the crackling to put around the pork, saying "people fight over this stuff."
