Gordon Ramsay chef's 'creamy' bread sauce recipe is perfect for Christmas dinner

When it comes to Christmas condiments, most people opt for gravy or cranberry sauce - while others prefer a spoonful of bread sauce to accompany their festive meal.

In fact, a YouGov survey revealed that 15 percent of Brits admit their ideal Christmas Day dinner features the creamy sauce. It is typically served alongside roast turkey, and dates back to the mediaeval times, when people would use bread to thicken their sauces.

Fortunately, a top chef at the Gordon Ramsay Academy has revealed his simple bread sauce recipe that can be made up to a month before Christmas and frozen until required. Senior chef Andrew Roberts took to Instagram to share his perfected method, which can be found below. He said: "I’m going to show you how to make one of my favourite things at Christmas, bread sauce."

Ingredients

  • 500ml whole milk
  • One small onion, peeled and grated
  • One small carrot, peeled and grated
  • Four cloves
  • One bay leaf
  • 125g stale white bread
  • Sea salt and black pepper
  • 30g unsalted butter
  • 30g double cream
  • Nutmeg

  • Saucepan
  • Wooden spoon
  • Chopping board
  • Sieve

Method

To start making this delicious sauce, simply place the milk, onion, carrot, cloves and bay leaf in a medium saucepan and bring to the boil. Take off the heat and leave to infuse for one hour.

Then blitz the bread to make breadcrumbs, make sure to keep the crusts on. Next, strain the milk through a sieve into a clean saucepan and use a spoon to press every last drop. Add the breadcrumbs into the saucepan and place over a medium heat. Bring this to a simmer and stir until thickened.

Remove from the heat and season with salt and pepper. Finely grate the nutmeg into the pan, before stirring through the butter and cream to make it "really rich". Finally, serve the sauce into a bowl and sprinkle with more nutmeg.

Andrew wrote: "If you’re making ahead, cool completely and transfer to a freezer-proof container. Seal and freeze for up to one month. Defrost fully before reheating until piping hot to serve."
