Mary Berry's warming one-pot sausage stew is a comforting staple for winter

This sausage stew will keep the whole family happy.

Finding the perfect recipes that are warming and heartening for the long winter evenings we are enduring - but also don't take forever to make - isn't always easy, but this one from beloved TV chef Mary Berry is the holy grail of comfort food for cold nights.

The best part is, you only need one pan to make this delicious sausage stew, so you will also save some time on what is most people's least favourite part of home cooking : the washing up. Mary recommends that you add some greens as a side with this one, which will make sure you're getting all the nutrients you need in one healthy balanced meal.

This one-pot recipe first appeared in Mary's cookbook 'Mary Berry's Simple Comforts' and is sure to be a crowd-pleaser in your home. "Sausages are a comfort food that the whole family can enjoy and this all-in-one-pan dish is simple yet full of flavour," she notes on the BBC website.

Ingredients:

  • 8 pork sausages (Mary recommends spicy ones, but you can use whatever if your preferred choice)
  • 4 rashers smoked bacon (finely chopped)
  • 250g new potatoes (sliced into thick disks)
  • 400g tin chopped tomatoes
  • 1 onion (large and sliced)
  • 1 red pepper (chopped into chunks)
  • 1 carrot (large and diced)
  • 300ml chicken stock
  • 1 garlic clove (crushed)
  • 2 tbsp sun-dried tomato puree
  • 1 tbsp sunflower oil
  • 2 sprigs of fresh thyme
  • salt and pepper for seasoning
  • Preferred green veggies of choice as a side

First things first, grab your casserole dish and pop it on the stove over a high heat. Put your sunflower oil in and heat it up, and then add your sausages of choice, and cook them until they have browned all over.

Once they are browned you will want to remove them from the casserole dish and put them to one side while you move on to frying your finely chopped bacon until it's gone nice and crispy - then you will set this aside too.

Put your red pepper chunks, sliced onion, diced carrot, and crushed garlic clove in next, and cook for five minutes at a high temperature. Then pop your stock in the pan, alongside the tomato puree, chopped tomatoes, and your fresh thyme.

Bring all of this to the boil, before adding your new potatoes and a healthy dose of seasoning with the salt and black pepper.

Next, you want to grab the bacon and sausages you set aside and pop them back in the casserole dish with your other ingredients, and simmer it all together for about 20 minutes - covered and on a gentle heat.

Once the 20 minutes have passed, uncover the dish and keep simmering the stew until the sauce reduces a bit and the "vegetables are tender" - this should take about ten minutes.

Then simply dish up alongside whatever green veggies you opted for and tuck into the hearty, warming stew.
