It's the second week in January, so many people will be sticking to their healthy eating habits - but that doesn't mean that you can't enjoy delicious and nourishing foods like Jamie Oliver's 'overnight chia seed pudding with star anise cherries'.
Celebrity chef Jamie Oliver admitted on his website that he and his family don't follow a specific diet, but they do "stay away from heavily processed foods and eat as fresh as possible." He spoke about how chia seeds are "rich in omega-3" and they "pack a nutritious punch and can be added to practically anything", and he shared his recipe for the chia seed pudding, which is his "go-to breakfast."

The method is seriously easy too. In a bowl or sealable container like a glass jar, combine the chia seeds, almond milk, a tablespoon of maple syrup, and vanilla. Stir, cover, and refrigerate overnight.
In a saucepot, combine the cherries, water, a tablespoon of maple syrup, and star anise. Bring it to the boil then reduce to simmer. Simmer until the water has reduced by ¾ and has thickened slightly probably about 15 to 20 minutes. Remove the star anise. All this can be done in advance and refrigerated until you want to serve.
