While roasted potatoes in any form are pretty much a complete classic that you will find on most tables during the Christmas season, these garlic and parmesan-crusted potatoes will take your side dish game to the next level. Perfectly crunchy on the outside and deliciously soft in the middle, your guests will be begging you for this recipe as they head out the door - and it's up to you whether you share the secret with them.

Whether you want to serve these at a dinner party, or just dig into the dish for dinner, you will not regret learning how to make these amazingly crunchy potatoes.

The delicious recipe was posted on Instagram by content creator and cookbook author Nicole Keshishian Modic - who goes by @Kalejunkie on social media. The cooking expert explained that "if there is one thing you make this holiday season, let it be" this.

She added, "This side dish is super simple to whip together and are pretty much the only way I want to eat potatoes—crispy, crunchy, soft in the middle, and covered in the parmesan cheese."

Ingredients:

First things first, preheat your oven to 220 degrees Celsius, before washing your small potatoes and cutting them in half. Once you have halved them, cut a diamond score into the flesh of the potato, before putting them into your large bowl.

Then toss the potatoes with the garlic powder, olive oil, parsley, salt, and pepper. and put this to one side. Grate your parmesan into a normal dinner bowl and add your freshly melted butter, mixing it all together into a thick paste.

Coat the bottom of your baking dish with this buttery, parmesan mixture, before adding a layer of potatoes - the diamond-scored side should be facing down and you should press it into the cheesy mix below, in an even layer.

Then simply repeat this process until your potatoes are in the dish, and cook them for around 25 minutes. Once they are golden brown and bubbling, take them out of the oven and let them sit and harden for 10 minutes, before tucking in.
